Changes Display Settings UI items to match current backend set up for theme and text colors.
Sets up dummy state for the color picker UX, which is an input for hexcodes and a changing color div to match the value. Did a brief pass with react-color but didn't quite like how it looked with the rest of the new admin dash UI, but if we want to add the color picker back in the future for maybe better UX then we can do so.
